You can substitute the red currants with any berries, but they taste really delicious with them.
Ingredients
- Spelt - 4.9 oz
- Sugar - 3.5 oz
- Hercules Oats - 3.5 oz
- Baking Powder - 1 tablespoon
- Flaxseeds - 1 tablespoon
- Salt - ¼ spoons
- Applesauce - 3 spoons
- Vegetable Oil - 3 spoons
- Soy Vanilla Milk - 8 fl oz
- Red Currant - 4.2 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease a muffin tin with butter or place a paper liner in each cup.
Step 2
In a bowl, mix together the flour, oats, sugar, baking powder, flaxseed meal, and salt.
Step 3
In another bowl, combine vegetable oil, applesauce, and soy milk.
Step 4
Combine both mixtures and gently fold in the berries.
Step 5
Spoon the batter into the molds, filling them three-quarters full.
Step 6
Bake for about 17–20 minutes until done, checking with a toothpick.
