Vegan Panna Cotta
Ingredients
- Coconut Milk - 1½ cups
- Fresh Berries - 5.6 oz
- Chia Seeds - 4 teaspoons
- Jerusalem Artichoke Syrup - 1 teaspoon
- Water - ½ cup
- Agar-Agar - 1 teaspoon
Step by Step guide
Step 1
In a saucepan, mix coconut milk and water, place over heat, and bring to a boil.
Step 2
Add agar-agar to the hot mixture, stir well until fully dissolved.
Step 3
Remove from heat, sweeten (you can use something other than Jerusalem artichoke syrup).
Step 4
Pour into cups, leaving space on top for the berry jelly, and place in a cool place until set.
Step 5
Blend fresh or frozen berries (such as strawberries, cherries, blackberries, or a mix) with a very small amount of water. Add chia seeds and sweetener to the resulting puree. Wait for the chia seeds to swell.
Step 6
Layer the berry jelly on top of the coconut base.
