Vegan Potato Cake

Ingredients

  • "Jubilee Cookies" - 17.6 oz
  • Chopped almonds - 5.3 oz
  • Margarine - 1 piece
  • Chopped almonds - 7.1 oz
  • Sugar - 6 tablespoons
  • Vanillin - 0.1 oz
  • Cocoa Powder - 6 tablespoons
  • Boiling water - 17 fl oz
  • Rum essence - 1 teaspoon

Step by Step guide

Step 1

Make a syrup from water, sugar, and cocoa: bring the ingredients to a boil and simmer for 2–3 minutes on the lowest heat, then cool.

Step 2

Beat the margarine with a mixer.

Step 3

Gradually pour in the syrup in a thin stream. Add vanillin. This will create a liquid cream.

Step 4

Crush the cookies into crumbs (you can use dry white bread).

Step 5

Gradually add the cookie crumbs to the cream. Mix well until homogeneous. Add the nuts.

Step 6

Finally, add the rum essence. Shape into cakes, roll in the remaining crumbs or cocoa. Refrigerate for a few hours.
