Ingredients
- Spelt - 8.8 oz
- Coarsely Ground Rye Flour - 8.8 oz
- Water - 12 fl oz
- Salt - 0.4 oz
- Onion - 6 oz
- Dry yeast - 0.4 oz
- Vegetable Oil - 1 tablespoon
Step by Step guide
Step 1
Finely chop the onion and sauté in vegetable oil until soft and translucent. Let it cool.

In a bowl, mix both flours, water, yeast, and salt. Knead the dough for at least 10 minutes — this affects the fluffiness of the bread. Transfer to an oiled bowl, cover with a towel, and let it sit in a warm place for 1 hour.
Step 3
Then, fold in the sautéed onions, knead again, shape the dough into your desired form (this bread is best baked as a thick flatbread), and place it on a baking sheet lined with parchment paper. Cover with a towel and let it rise for another 1 hour.
Step 4
Meanwhile, preheat the oven to 428°F.
Step 5
Bake the bread for 10 minutes, then reduce the temperature to 392°F and bake for another 30–40 minutes until done.
Step 6
Cool and serve.
