Ingredients
- Eggplants - 1 piece
- Carrot - 3 pieces
- Avocado - 1 piece
- Meyer Lemon Juice - 2 teaspoons
- Dill - 1 bunch
- Grapeseed Oil - 3 tablespoons
Step by Step guide
Step 1
Peel the carrots and cut them along with the eggplant into matchsticks about the length of a pinky finger.
Step 2
Grease a baking sheet with oil. Arrange the vegetables on it so that they do not touch each other. Brush them with oil as well.
Step 3
Place the baking sheet in a preheated oven at 482°F (482 degrees Fahrenheit) for 20-30 minutes, depending on the thickness of the sliced vegetables. Check for doneness by the softness of the eggplant and the brown crust.
Step 4
While the vegetables are baking, prepare the sauce. You will need a very ripe avocado. Cut the fruit in half, scoop out the flesh with a spoon, and place it in a bowl. Add the lemon juice and mash until smooth. Chop the dill and mix it into the sauce.
Step 5
Serve the vegetable chips on a platter with the green sauce.
