Ingredients

  • Eggplants - 2 pieces
  • Orange Bell Peppers - 2 pieces
  • Courgette - 3 pieces
  • Olive Oil - 2 tablespoons
  • Phyllo Dough - 6 sheets
  • Fresh basil leaves - 1.8 oz
  • Whole egg - 1 piece
  • Feta cheese - 3.5 oz

Step by Step guide

Step 1

Wash and chop the eggplants and zucchini, place them on a baking sheet, put in a preheated oven at 392°F (about 400 degrees Fahrenheit) and bake for about 15 minutes until golden brown. Wash the bell peppers, remove the seeds, and also place them in the oven until the skin darkens and can be easily removed.

Step 2

Layer all the sheets of phyllo dough, rolling them out to form a rectangle where the filling will be placed in the center.

Step 3

Brush the dough with olive oil and layer the eggplants, zucchini, bell peppers, spinach, and feta cheese (pre-cut into cubes). Fold the edges and place on the baking sheet with the folded edges down.

Step 4

Brush the top with egg yolk and bake in the oven for about 40 minutes until golden brown.
