Vegetarian Burrito
Ingredients
- Tomatoes - 2 pieces
- Canned Baby Beets - 14.1 oz
- Dried Rosemary - 1 teaspoon
- Eel - 6 pieces
- Lime - 1 piece
- Garlic - 0.1 oz
- Vegetable Oil - 4 tablespoons
- Black Cumin (Cumin) - 1 teaspoon
- Salt - 1 teaspoon
- Marinated cherries - 6 pieces
- Avocado - 2 pieces
- Onion - 1 piece
- Tortillas - 6 pieces
Step by Step guide
Step 1
Peel the onion and garlic. Slice the onion into thin half-rings and finely chop the garlic. Dice the tomatoes.
Step 2
In a skillet, heat 2 tablespoons of vegetable oil, add the onion, and sauté over medium heat for 5 minutes, stirring frequently. Then add the diced tomatoes, cumin, oregano, and salt, and cook for another 5 minutes. The tomato sauce should thicken.
Step 3
Add the canned beans (drained), and cook for about 3 more minutes.
Step 4
Now the main filling is ready. Prepare the vegetables - rinse the lettuce leaves, slice the avocado, and cut the cherry tomatoes into rounds. Squeeze the juice from the lime.
Step 5
Just before wrapping the burrito, warm the tortillas. Hold the tortilla on a hot skillet for 10 seconds on each side.
Step 6
Start layering the filling. First, place a lettuce leaf (you can also use spinach or arugula). On top, add 2 tablespoons of beans, and then place the cherry tomatoes (a few slices, I used 4-5 slices).
Step 7
On top, add a few slices of avocado and drizzle with a teaspoon of lime juice.
Step 8
Fold the sides of the tortilla and press them against the filling.
Step 9
Using your thumbs, lift the bottom edge of the tortilla, cover the filling, and roll the burrito away from you.
Step 10
To make it easier to eat, you can wrap the burrito in foil. Before serving, cut the burrito in half.
