Ingredients

  • Egg white - 4 pieces
  • Butter - 0.7 oz
  • Spinach - 3.5 oz
  • Tortillas - 2 pieces
  • Avocado - 1 piece
  • Fajitas sauce - 2 tablespoons

Step by Step guide

Step 1

Heat the butter in a pan over medium heat. Whisk the eggs in a bowl with a whisk or fork until you achieve a light, frothy mixture. Pour it into the pan, add the spinach, and mix everything together. Season with salt and pepper. Cook, stirring, until the eggs are set, about 2 minutes.

Step 2

In another hot pan, warm the tortillas (5 seconds on each side) or microwave them for 10 seconds. Place the cooked mixture onto the tortillas, top with avocado and tomato salsa (which is made simply by finely chopping a tomato, 2 cloves of garlic, a green onion, and a quarter of a small white onion, then mixing everything together). Roll the tortilla into a tube and bring it to your mouth.
