Description
The total calorie content of the dish is 1500 kcal, and one kulich contains 750 kcal. You can add your favorite spices (cinnamon, ginger, turmeric, cocoa, vanilla), dried fruits (apricots, prunes, dates, dried cranberries or cherries, figs) or nuts (walnuts, almonds, pistachios, cashews, hazelnuts), as well as seeds (pumpkin, sunflower, sesame). You can leave some raisins and sprinkle them on the kulich. You can also top it with shredded coconut. This recipe yields 2 medium-sized kulichs.

- Kefir - 10 fl oz
- Wheat Flour - 7.8 oz
- Cottage cheese - 3.5 oz
- Vanilla salt - 0.3 oz
- Baking Powder - 4 teaspoons
- Citrus Zest Mix - 2 teaspoons
- Stevia Extract - to taste
- Raisins - 3.5 oz
Step by Step guide
Step 1
Mix warm kefir with baking powder and let it sit for 10 minutes. The mixture should double in volume.
Step 2
Rinse the raisins, chop them if they are large, and dry them. Mix with 1 teaspoon of flour.
Step 3
Grate the zest of one lemon.
Step 4
Blend the cottage cheese, vanilla sugar, lemon zest, and stevia with a mixer (a hand blender can also be used, but a mixer is better).
Step 5
Pour in the kefir that has been sitting with the baking powder. Whip again with the mixer.
Step 6
Add the sifted flour and raisins. Mix with a spoon.
Step 7
Fill the kulich mold 2/3 full with the batter, as it will rise during baking.
Step 8
Bake in a preheated oven at 356°F for about 1 hour. Check for doneness with a match or toothpick.
