Very Chocolatey Biscotti
Ingredients
- Coarsely Ground Rye Flour - 1½ cups
- Wheat Flour - 1½ cups
- Cocoa Powder - 0.3 cups
- Baking Powder - 1¼ teaspoons
- Salt - ½ teaspoon
- Activated Baking Soda - ½ teaspoon
- Whole egg - 1 piece
- Chocolate eggs - 3 pieces
- Sugar - 1 cup
- Vanilla extract - 1 tablespoon
- Liquid dark chocolate - 5.3 oz
Step by Step guide
Step 1
Preheat the oven to 320°F. Line 2 baking sheets with parchment paper.
Step 2
Melt the chocolate in a water bath.
Step 3
In a bowl, mix both flours, cocoa, baking powder, baking soda, and salt. In another bowl, beat the eggs, yolk, and sugar with a mixer. Then add the vanilla and melted chocolate. Gradually incorporate the dry ingredients, mixing with a wooden spoon.
Step 4
Place the dough on a floured surface and knead for a minute. Then divide into 2 parts and roll each into logs about 20 cm long. Place on the prepared baking sheets.
Step 5
Bake in the oven for 20 minutes, then cool for 20 minutes and slice diagonally into thin pieces.
Step 6
Arrange the pieces on the baking sheets and bake for another 10 minutes. Flip and return to the oven for another 10–15 minutes. Transfer to a rack and cool.
