Description
P.S. You can add a couple of boiled, finely chopped eggs to the filling. Verzere is a national dish of Moldovan cuisine, a type of pie with sauerkraut or fresh cabbage shaped like small envelopes. It is very easy to prepare with a minimal amount of ingredients. The dough is very pliable, and after baking, it becomes crispy and flaky. A real find for home cooks!
Ingredients
- Water - 3 fl oz
- Vegetable Oil - 3 fl oz
- Salt - ½ teaspoon
- Wheat Flour - 1½ cups
- Onion - 1 piece
- Scallions - 2 stalks
- Sauerkraut - 10.6 oz
- Chicken Egg - 1 piece
Step by Step guide
Step 1
In a bowl, mix warm water, vegetable oil, and salt. Gradually add the flour. First, stir the dough with a spoon, then knead it with your hands. You don't need to knead for long; the dough should be elastic and soft. Cover the prepared dough with a napkin and let it rest for about 30 minutes.
Step 2
Prepare the filling. Squeeze the sauerkraut well to remove excess liquid. In a skillet, sauté the finely chopped onion, add the cabbage, and sauté a little more. Remove the cabbage from heat, add the finely chopped green onion, and season with pepper (I didn't add salt), then mix. Let it cool completely.
Step 3
Divide the dough into pieces (do not use more flour; the dough is quite elastic and rolls out well). I divided it into 12 pieces of 45 g each. It is very convenient to roll out the dough on a rectangular board. First, roll a piece of dough into a long sausage. Then roll it out thinly into a rectangle. Place about 1 tablespoon of filling at the edge. First, fold the edges inward, then roll it up like a cylinder. Repeat with the remaining dough.
Step 4
Place on a baking sheet lined with parchment paper, brush with beaten egg, and bake for 20 minutes at 374°F.
