Ingredients
- Walnuts - 8.8 oz
- Butter - 8.8 oz
- Farm fresh eggs - 5 pieces
- Liquid dark chocolate - 5.3 oz
- Sugar - 7.1 oz
- Wheat Flour - 1.8 oz
- Powdered Sugar - 1.8 oz
- Cream 22% - 1.8 oz
- Baking Powder - 1 teaspoon
- Salt - a pinch
- Lingonberry - 5.3 oz
- Marinated cherries - 5.3 oz
Step by Step guide
Step 1
Grind the walnuts into powder, add baking powder, flour, and a pinch of salt, and mix everything together.
Step 2
Separate the egg yolks from the whites.
Step 3
Beat the butter with 150 g of sugar.
Step 4
Add the yolks one at a time while continuing to beat.
Step 5
Then add the flour with the nuts and mix well.
Step 6
Whip the chilled egg whites with a pinch of salt, add the powdered sugar, and continue whipping until a firm smooth mass forms.
Step 7
Gently fold the egg whites into the batter.
Step 8
Pour the batter into a baking pan lined with greased parchment paper.
Step 9
Bake in a preheated oven for about 40–50 minutes, check with a toothpick — if it comes out dry, remove the cake and let it cool.
Step 10
In a blender, mix the berries with 50 g of sugar.
Step 11
Make the glaze: gently melt the chocolate with the cream over a water bath while stirring. If the glaze is too thick, add more cream.
Step 12
Cut the cake horizontally into two thin layers. Spread the berry mixture on the bottom layer, cover with the top layer, and coat with chocolate glaze, spreading it evenly.
