Ingredients

  • Egg white - 3.2 oz
  • Wheat Flour - 14.1 oz
  • Butter - 7.1 oz
  • Baking Powder - 0.4 oz
  • Salt - 0.4 oz
  • Sugar - 1.4 oz
  • Milk - 10 fl oz
  • Eggplants - 4 lbs
  • Tahini - 3.5 oz
  • Sesame Oil - 1 tablespoon
  • Garlic - 6 cloves
  • Meyer Lemon Juice - 0 fl oz
  • Orange Bell Peppers - 2 lbs
  • Tomatoes - 2 lbs
  • Olive Oil - to taste
  • Thyme - to taste

Step by Step guide

Step 1

Prick the eggplants with a fork or skewer, then roast them in the oven at 410°F for about 30 minutes. Remove them, transfer to a container, and cover with foil or plastic wrap. Allow to cool.

Step 2

Then, slice the eggplant lengthwise and scoop out all the flesh into a separate bowl. Add tahini, sesame oil, 3 cloves of garlic (finely chopped), lemon juice, salt, and pepper.

Step 3

Roast 1 kg of red bell peppers in the oven for about 30 minutes at a temperature of 356°F. Then remove them and place in an ovenproof dish, covering with a lid or plastic wrap. Allow to cool completely. Carefully peel off the skin using a vegetable knife or your hands, and break the peppers into pieces of red flesh. Discard the seeds and skin.

Step 4

Peel 1 kg of firm tomatoes (make a cross-shaped incision on the opposite side from where the tomato was attached to the plant, then immerse in boiling water for 30 seconds, followed by a plunge into cold water). Carefully remove the skin using a vegetable knife.

Step 5

Next, cut each tomato into 4–6 equal pieces and remove the seeds. Arrange them on a baking sheet lined with parchment paper, drizzle with olive oil, add pieces of garlic, thyme leaves, salt, and sugar.

Step 6

Place in the oven for 2 hours at a temperature of 70–176°F. Then cool down. It can be stored in a tightly sealed jar with the addition of olive oil.

Step 7

Beat the egg whites until they resemble bath foam. Mix the flour, baking powder, 10 grams of salt, and 40 grams of sugar, then add the milk and softened butter (at room temperature). Gently fold in the beaten egg whites. Mix well. It is best to use a hand mixer on a low speed. The batter is ready.

Step 8

Preheat the waffle iron to 482°F, pour in the desired amount of batter (depending on the size of the waffle iron). Close the waffle iron, wait for 3 minutes, then open it, flip the waffle, and wait for another minute.

Step 9

Cut the waffles diagonally to create triangles.

Step 10

Top with a heaping tablespoon of baba ghanoush and garnish with confit tomatoes, roasted peppers, sesame seeds, and any fresh herbs, such as parsley.
