Ingredients

  • Wheat Flour - 2¼ cups
  • Meyer Lemon Juice - 4 tablespoons
  • Sugar - 1¾ cups
  • Powdered Sugar - ¼ cup
  • Butter - 5.3 oz
  • Brandy - 3 tablespoons
  • Farm fresh eggs - 5 pieces
  • Baking Powder - 1 teaspoon
  • Walnuts - 2 cups

Step by Step guide

Step 1

In a deep bowl, mix 1.75 cups of flour, 0.75 cups of sugar, butter, 1 egg, and baking powder, knead into a shortcrust pastry, and refrigerate for 30 minutes.

Step 2

For the sponge cake: Beat 4 eggs with 4 tablespoons of sugar until well combined, then add 4 tablespoons of flour and mix on the lowest speed for about 1 minute.

Step 3

Grind the walnuts together with 0.5 cups of sugar, pour in the brandy, and turn everything into a thick mass.

Step 4

Evenly distribute the shortcrust pastry on the bottom of a greased baking dish and create small edges.

Step 5

Next, spread the walnut mixture and pour the sponge cake batter on top.

Step 6

Place in a preheated oven at 374°F for 30–40 minutes (check for doneness with a wooden stick).

Step 7

Mix the lemon juice with powdered sugar and brush it onto the pie, allowing it to set.
