Watermelon Granita with Gin
Ingredients
- Sugar - 7.1 oz
- Water - 7 fl oz
- Lime - 4 pieces
- Watermelon - 6 lbs
- Gin - 7 fl oz
Step by Step guide
Step 1
Place the sugar in a pot with water. Heat the mixture and keep it on low heat until the sugar dissolves, then bring to a boil and simmer for about 5 minutes. Add the juice from 4 limes and let it cool.
Step 2
Cut the watermelon flesh into pieces, removing the seeds. Place it in a food processor and blend well with 100 ml of gin. Add the cooled syrup and blend again in the processor. Pour into a freezer container. Place in the freezer for 2 hours until it is almost frozen.
Step 3
Remove from the freezer and break up the ice crystals with a fork. Return to the freezer and let it freeze completely.
Step 4
Pour the resulting granita with the remaining gin. Serve with lime wedges and cookies.
