Watermelon jelly with lemon juice

Ingredients

  • Gelatin - 0.5 oz
  • Sugar - ½ cup
  • Salt - a pinch
  • Meyer Lemon Juice - 1 tablespoon
  • Watermelon - 3 lbs

Step by Step guide

Step 1

In a small bowl, mix the gelatin with 60 ml of water. Let it sit for 5 minutes.

Step 2

Meanwhile, in a saucepan, combine the sugar, salt, and 60 ml of water. Bring to a boil while stirring, then remove from heat. Stir in the gelatin.

Step 3

In the meantime, blend the watermelon flesh with the lemon juice until pureed. Strain through a sieve into a large bowl — you will need about 720 ml of puree.

Step 4

Add the syrup with gelatin to the puree, mix well, and pour into dessert cups. Refrigerate until set.
