Watermelon Pudding
Ingredients
- Sugar - 2.3 oz
- Corn Starch - 2.8 oz
- Watermelon - 3 lbs
- Vanilla extract - 1 teaspoon
- Whipped Cream - to taste
- Candied fruits - to taste
- Pistachios - to taste
- Liquid dark chocolate - to taste
- Ground Cinnamon - to taste
Step by Step guide
Step 1
Blend the watermelon flesh (without seeds) into a puree using a blender.
Step 2
In a saucepan, combine sugar and cornstarch. Stir in the watermelon puree. Bring the mixture to a boil over medium heat, stirring constantly and scraping the bottom of the saucepan with a wooden spatula. Cook for about five more minutes until the watermelon mixture thickens slightly.
Step 3
Remove the saucepan from heat and add the vanilla extract. Using a silicone spatula, strain the mixture through a fine sieve, then cover it with plastic wrap and refrigerate for four hours.
Step 4
Before serving, you can decorate the pudding with whipped cream, ground pistachios, candied fruits, and grated chocolate, and sprinkle with cinnamon.
