Watermelon Rind Jam
Ingredients
- Watermelon - 2 lbs
- Sugar - 3 lbs
- Water - 17 fl oz
- Citrus Zest Mix - to taste

Step 1
Peel the watermelon rinds and separate the flesh from the white rind. Cut the white rind into pieces measuring 2-3 cm.
Step 2
Pour hot water over the white rinds and boil for 5-10 minutes, then drain in a colander and cool.
Step 3
Pour sugar into the water and stir until it boils. Once the sugar is completely dissolved, add the zest or lemon juice.
Step 4
Transfer the watermelon pieces into the syrup and boil for 20-30 minutes, then remove from heat and let sit in the syrup for 2-3 hours. Repeat this process, then remove from heat and let the watermelon pieces sit in the syrup for another 2-3 hours. For the third time, place the jam on low heat and cook until ready - the rinds should become transparent. The jam is ready.
