Ingredients

  • Heavy cream - 8 fl oz
  • 10% cream - 12 fl oz
  • Salt - ¼ teaspoon
  • Powdered Sugar - 3.5 oz
  • Vanilla extract - 1 teaspoon
  • Egg white - 2 pieces
  • Amaretti - 3.9 oz
  • Amaretto Liqueur - 2 fl oz

Step by Step guide

Step 1

In a deep bowl, beat both types of chilled cream, gradually adding half of the powdered sugar, until a fluffy thick cream forms. Add the liqueur and vanilla extract, mixing until smooth. In a separate bowl, beat the room temperature egg whites with a pinch of salt on low speed until slightly foamy. Then gradually add the remaining powdered sugar while continuing to beat at a higher speed, until a stiff meringue forms. Gently fold the whipped egg whites into the whipped cream using a spatula, mixing from top to bottom. Place the resulting smooth cream in the refrigerator for a couple of hours.

Step 2

Remove the cream from the refrigerator, stir, transfer it to an ice cream maker, and churn according to the instructions for about 20-40 minutes. In the last minute of churning, add finely crushed amaretti cookies. At the end of churning, the mixture will resemble slightly softened soft serve ice cream. Fill a container with this mixture and place it in the freezer for 3-4 hours until firm.

Step 3

If you don't have an ice cream maker, immediately transfer the ice cream mixture to a container, add the cookies, stir, and place it in the freezer. Take out the container and stir the contents every half hour until fully set.
