Description
This dessert hails from a castle of the same name, where in the 17th century the kitchen was managed by a chef known for hosting royal feasts. He tragically took his own life due to the late delivery of either fresh fish or fresh cream.
Ingredients
- Donut Peaches - 2 pieces
- Cherries in Liqueur - 1 fl oz
- 10% cream - 5 fl oz
- Powdered Sugar - 3.5 oz
- Egg white - 3 pieces
- Vanilla extract - 0 fl oz
- Fresh Mint - to taste

Prepare all the ingredients.

Peel the peaches and slice them thinly.
Step 3
Pour the peaches with cherry liqueur and let them marinate in the refrigerator for 30 minutes.

Pour a little water into a saucepan and bring it to a boil.

Place a heatproof bowl over a saucepan, ensuring it doesn’t touch the water. Whisk the egg whites with powdered sugar in the bowl over low heat. Typically, it takes about 10 minutes for the egg whites to become fluffy. Then, transfer the bowl to the refrigerator for 10 minutes.

Combine the cream with vanilla extract and whip until thick and fluffy.

Gently fold the beaten and chilled egg whites into the whipped cream using a silicone spatula.

Arrange the marinated peach slices on plates.
Step 9
Place a topping of Chantilly cream (a mixture of whipped cream and whipped egg whites) on top.

Serve garnished with a mint leaf. This final touch not only adds a splash of color but also beautifully complements the sweetness of the cream and the pickled peaches.
