White Chocolate and Cranberry Cake
Ingredients
- Ladyfinger Cookies - 6.3 oz
- Butter - 2.6 oz
- Gelatin - 7 pieces
- Heavy cream - 7.1 oz
- White Chocolate - 5.3 oz
- Cottage cheese - 8.8 oz
- Sugar - 2.1 oz
- Water - 0 fl oz
- Cranberry - 14.1 oz
- Mulled Wine - 9 fl oz
Step by Step guide
Step 1
Finely chop the cookies in a food processor, melt the butter and add it to the cookies.
Step 2
Mix everything well and spread it in a 24 cm springform pan.
Step 3
While the rest is being prepared, place it in the refrigerator.
Step 4
Let the 4 sheets of gelatin sit in cold water for 5 minutes.
Step 5
Whip the cream with a small amount of sugar.
Step 6
Melt the white chocolate in a water bath, cool slightly, and mix with the cream.
Step 7
Add the cottage cheese mixture and the remaining sugar.
Step 8
Remove the gelatin and let the cold water drain, dissolve it in hot water.
Step 9
Carefully pour it into the mixture and stir.
Step 10
The filling should be at room temperature. Spread it on the base and refrigerate overnight.

Soak 3 sheets of gelatin in cold water.
Step 12
Heat the mulled wine in a pot.
Step 13
Add the gelatin to the mulled wine. Let it dissolve. Cool.
Step 14
Cover the cake filling with berries and gently pour the mulled wine evenly on top.
Step 15
Let it sit in the refrigerator for about half an hour until ready.
