White Chocolate Mousse with Raspberries

Ingredients

  • Raspberry leaves - 5.3 oz
  • Orange bitters - 2 tablespoons
  • White Chocolate - 7.1 oz
  • Orange juice concentrate - 1 tablespoon
  • 10% cream - 10 fl oz
  • Lemon - ½ piece

Step by Step guide

Step 1

Soak the raspberries in 1 tablespoon of liqueur and let sit for 15 minutes.

Step 2

Meanwhile, melt the chocolate in a water bath (in a bowl placed over a pot of boiling water) or in the microwave, and let it cool.

Step 3

Whip the cream, add the orange juice, the remaining liqueur, and the zest of half a lemon. Add the soaked raspberries and chocolate. Stir only a few times to avoid crushing the berries. Divide into small bowls or glasses and chill.
