Ingredients
- Milk - 8 fl oz
- Olive Oil - 4 fl oz
- Meyer Lemon Juice - 2 teaspoons
- Chicken Egg - 1 piece
- Wheat Flour - 9.2 oz
- Baking Powder - 3 teaspoons
- White Chocolate - 3.5 oz
- Sugar - 5.3 oz
- Salt - a pinch
Step by Step guide
Step 1
In one bowl, combine all the wet ingredients: lemon juice, oil, milk, and egg. Mix them well.
Step 2
Take the white chocolate and chop it into small pieces.
Step 3
In a second bowl, add the dry ingredients: flour, baking powder, salt, sugar, and chocolate. Mix the dry ingredients.
Step 4
Add the wet mixture to the dry ingredients. Gently mix. It's okay if there are small lumps; overmixing can make your muffins too tough.
Step 5
Spoon the mixture into muffin molds and bake for 20–25 minutes at 356°F.
