Ingredients
- Cream 22% - 10 fl oz
- White Chocolate - 8.8 oz
- Butter - 2 tablespoons
- 70% Dark Chocolate - 8.8 oz
- Ground Coffee - 3 tablespoons
- Cocoa Powder - to taste
Step by Step guide
Step 1
Pour the cream into a saucepan, bring to a boil, but do not boil. Reduce the heat, add the coffee, and simmer for 20 minutes. Strain and return to the saucepan.
Step 2
Chop the white chocolate and add it to the cream. Place over low heat and cook until the chocolate is completely melted. Remove from heat, add the butter, and stir. Let cool and refrigerate for 24 hours.
Step 3
Whip the chilled chocolate and butter mixture with a mixer.
Step 4
Transfer to a pastry bag. Pipe walnut-sized balls onto a sheet of parchment paper. Refrigerate for 4 hours.
Step 5
Melt the dark chocolate and cool to the desired temperature. Skewer the truffles with a thin stick or fork and dip them in the dark chocolate. Place on a board to let excess chocolate drip off.
Step 6
Dust the truffles with cocoa powder using a sieve. Refrigerate for at least 2 hours.
