Ingredients
- Wheat Flour - 7.1 oz
- Baking Powder - 1 teaspoon
- Brown Sugar - 2.8 oz
- Ground Oats - ½ cup
- Salt - a pinch
- Milk - 7 fl oz
- Farm fresh eggs - 2 pieces
- Butter - 2.3 oz
- Dried cranberries with sugar - 7.1 oz
- Natural Yogurt - 1.8 oz
- Chopped almonds - ½ cup
- Citrus Zest Mix - 2 teaspoons
- Meyer Lemon Juice - 4 tablespoons
- Honey - 2 tablespoons
- Powdered Sugar - 2 tablespoons
Step by Step guide
Step 1
Thaw the cranberries and drain the juice. Melt the butter in a water bath or microwave.
Step 2
Mix the flour, oats, sugar, and salt.
Step 3
In a separate bowl, beat the eggs with the milk, add the yogurt and melted butter. Combine the mixtures.
Step 4
Gently fold in the cranberries, zest, nuts, and spices to taste (ginger, cloves, nutmeg).
Step 5
Pour into 12 muffin cups, filling them 2/3 full. Bake at 374°F for 25 minutes.
Step 6
For the glaze, mix the lemon juice and honey, heat, and add the powdered sugar. Bring to a boil, let cool slightly, and brush over the cooled muffins.
