Description

Baking time depends on the size of the items: for pastries, it takes about 7–10 minutes, while for pies, it takes around 20 minutes. The temperature should be set between 170–180 degrees Celsius.

  • Dry yeast - 0.7 oz
  • Sugar - 1.8 oz
  • Wheat Flour - 21.2 oz
  • Chicken Egg - 3 pieces
  • Butter - 5.3 oz
  • Salt - 0.7 oz

Step by Step guide

Heat milk with 3.2% fat content to 100°F. At home, you can determine the temperature by touch: the milk should feel slightly warm. Add the yeast to the warm milk and stir until dissolved. Then add 10 grams of sugar.

Transfer the mixture to the mixer bowl, add another 40 grams of sugar (for sweet pastries, increase the total amount of sugar to 100 grams), then add flour, eggs, and softened butter with a fat content of 82.5%. Mix the ingredients together.

Knead the dough with a mixer on low speed for 20 minutes, adding salt towards the end.

After the first kneading, leave the dough covered with a cloth at room temperature for 20 minutes to rise. Then, knead it thoroughly by hand and let it rest for another 20 minutes. After that, knead it a third time. With each folding, the dough is enriched with air and rises better.
