Description

The finished dough should be elastic, not sticky to the hands, and should easily pull away from the sides of the bowl, but it must not be tough (otherwise, the baked goods will turn out hard). A helpful tip is to check out a lesson on a cooking website about how to make preferment dough, and you can use the ingredient quantities from this recipe.

Ingredients

  • Water - 15 fl oz
  • Wheat Flour - 2 lbs
  • Dry yeast - 0.4 oz
  • Butter - 3.5 oz
  • Chicken Egg - 1 piece
  • Sugar - 2 spoons
  • Salt - 1½ spoons

Step by Step guide

Step 1

Prepare the starter for the yeast dough. To do this, mix warm water (temperature 95–98 degrees Fahrenheit), yeast, and sugar, then add flour. You will need enough flour to achieve a batter-like consistency, similar to that of pancakes (approximately 150–200 grams).

Step 2

Lightly dust the starter with flour, cover it with a cloth, and place it in a warm spot for 1 hour.

Step 3

Mix the oil and egg together. You can use either vegetable oil or butter. If you are using butter, make sure to melt it first and let it cool to room temperature.

Step 4

Add the mixture of butter and egg, along with salt, to the starter. Then gradually incorporate the remaining flour and knead the dough well on a countertop.

Step 5

Place the dough back in the bowl, cover it with a cloth, and set it in a warm place to rise for 1 hour.

Step 6

Knead the dough once more.
