Yogurt Lime Muffins
Ingredients
- Natural Yogurt - 1 cup
- Sugar - 1 cup
- Vegetable Oil - 0.3 cups
- Orange zest - 3 teaspoons
- Lime Juice - ¼ cup
- Wheat Flour - 1.6 cups
- Farm fresh eggs - 2 pieces
- Baking Powder - 1½ teaspoons
- Salt - a pinch
- Activated Baking Soda - ½ teaspoon
Step by Step guide
Step 1
Preheat the oven to 180-392°F (350-400 degrees Fahrenheit). Prepare a muffin tin or a 23 cm (9 inch) round baking dish. Grease the sides with vegetable or butter.
Step 2
In a large bowl, mix the yogurt, vegetable oil, sugar, lime zest, and lime juice. Add the eggs one at a time, beating well after each addition. Sift the flour, baking powder, baking soda, and salt, and fold them into the yogurt mixture. Mix well with a spoon.
Step 3
Spoon the batter into the prepared molds, filling each about 2/3 full, and bake for 35-40 minutes until cooked through and golden brown on top. Remove from the oven and let cool for 10 minutes. Serve slightly warm or at room temperature.
