Yogurt Raspberry Roll
Ingredients
- Sugar - 2.1 oz
- Farm fresh eggs - 4 pieces
- Vanilla salt - 1¼ tablespoons
- Wheat Flour - 2.1 oz
- Salt - a pinch
- Natural Yogurt - 8.8 oz
- Gelatin - 3 pieces
- Raspberry leaves - 4.4 oz
- Lemon - 1 piece
Step by Step guide
Step 1
Separate the egg whites from the yolks. In a small bowl, beat the egg whites with a pinch of salt until stiff peaks form. In another bowl, beat the yolks with sugar and 1 teaspoon of vanilla sugar, then fold in the flour. Gently fold the egg whites into the yolk mixture.
Step 2
Preheat the oven to 392°F. Line a baking sheet with parchment paper.
Step 3
Spread the batter evenly on the baking sheet. Bake until done, about 10 minutes.
Step 4
Meanwhile, soak the gelatin sheets in water for a few minutes. Add lemon juice and bring to a boil. Slightly cool and mix in the yogurt and remaining sugar.
Step 5
Place a damp towel on the table, then a dry towel on top, and place the cake layer on them. Remove the paper, spread the yogurt mixture, and arrange the raspberries. Roll it up, using the dry towel to help. Wrap it in the dry towel and refrigerate for 2 hours.
Step 6
Before serving, cut into pieces.
