Zucchini and Lemon Muffins

Ingredients

  • Wheat Flour - 2 cups
  • Sugar - ½ cup
  • Baking Powder - 1 tablespoon
  • Salt - 1 teaspoon
  • Lemon - ½ piece
  • Chopped almonds - 3.5 oz
  • Raisins - 3.5 oz
  • Milk - ½ cup
  • Large eggs - 2 pieces
  • Courgette - 7.1 oz
  • Vegetable Oil - 0.3 cups

Step by Step guide

Step 1

Preheat the oven to 392°F. Grease a muffin tin or place paper liners in each cup.

Step 2

Grate the zest of half a lemon using a fine grater. Grate the zucchini using a coarse grater (1 cup).

Step 3

In a bowl, mix the flour, sugar, baking powder, salt, and lemon zest. Then add the walnuts and raisins.

Step 4

In another bowl, mix the eggs, milk, and vegetable oil.

Step 5

Combine the egg mixture with the dry ingredients and mix well. Add the zucchini.

Step 6

Spoon the batter into the muffin cups and bake for 20-25 minutes until done, checking with a toothpick.

Step 7

Cool for 5 minutes in the pan and then transfer to a plate.
