An amazing and wonderful recipe for vegan brownies: a tender and new texture. An important tip: when the zucchini is mixed into the batter, allow it to sit for 5 minutes to get accustomed and to blend together.

- Vegetable Oil - 4 fl oz
- Sugar - 7.1 oz
- Vanilla extract - 1 tablespoon
- Wheat Flour - 9.2 oz
- Cocoa Powder - 2.3 oz
- Activated Baking Soda - 1½ spoons
- Salt - 1 tablespoon
- Courgette - 17.6 oz
- Bittersweet Chocolate - 7.1 oz
Step by Step guide
Step 1
Prepare all the ingredients. Preheat the oven to 356°F.
Step 2
Mix the butter, sugar, and vanilla in a large bowl.
Step 3
Add the flour, cocoa powder, baking soda, and salt. Mix until well combined.
Step 4
Grate the zucchini using a large grater.
Step 5
Stir the zucchini into the batter and let it rest for 5 minutes.
Step 6
Mix the dough once more.
Step 7
Add the chocolate to the dough and mix again.
Step 8
Grease a 20x30 cm (8x12 inch) baking dish with butter and line it with parchment paper.
Step 9
Pour the batter into the baking dish and place it in the oven for 25–35 minutes. Check the brownies for doneness with a toothpick.

Allow the baked brownies to cool on a wire rack.
