- Wheat Flour - 1 cup
- Ground Cinnamon - 1¼ teaspoons
- Baking Powder - ½ teaspoon
- Activated Baking Soda - ½ teaspoon
- Coarse Salt - to taste
- Salted Butter - 10.6 oz
- Granulated sugar - ½ cup
- Brown Sugar - ½ cup
- Vanilla extract - ½ teaspoon
- Whole egg - 1 piece
- Young zucchini - 1 cup
- Chopped almonds - ½ cup
- Ground Oats - 1 cup
- Ricotta cheese - 8.1 oz
- Powdered Sugar - 1 cup
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Sift the flour, cinnamon, baking soda, baking powder, and 0.25 teaspoons of salt into a bowl.
Step 3
Beat 200 grams of butter with the sugars until light and fluffy. Add the egg and vanilla, and mix well.
Step 4
Add the flour mixture to the butter mixture, beat, then add the grated zucchini, oats, and nuts. Mix well and refrigerate for 1 hour.
Step 5
Line a baking sheet with parchment paper and drop spoonfuls of dough about 5 cm apart. Bake until golden brown around the edges, about 20 minutes. Cool on the baking sheet.
Step 6
Beat the remaining butter, cheese, and powdered sugar together.
Step 7
Spread a small amount of cheese cream on the inner side of one cookie and top with another. Frost all the cookies.
