You can use zucchini instead of or in addition to the squash.
Ingredients
- Courgette - 2 lbs
- Potato - 17.6 oz
- Onion - 1 head
- Feta cheese - 14.1 oz
- Chicken Egg - 3 pieces
- Wheat Flour - 4.2 oz
- Olive Oil - 1 fl oz
- Vegetable Oil - 1 qt
- Chopped Sage Leaves - to taste
- Dried Rosemary - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the ingredients.
Step 2
Peel the zucchini and potatoes. Grate them on a coarse grater.
Step 3
Mix the grated zucchini and potato by hand.
Step 4
Cut the onion in half. Grate one half on a very fine grater, add it to the vegetables, and mix everything together. Season with salt to taste.
Step 5
Place the minced meat on a sieve, cover it with cheesecloth, weigh it down, and let it drain for an hour. If you're short on time, wrap the minced meat in cheesecloth and squeeze it well by hand.
Step 6
Finely chop half of the onion.
Step 7
Finely chop the feta cheese.
Step 8
Mix the onion, olive oil, eggs, 5 tablespoons of flour, chopped parsley, and oregano. Add the cheese and gently stir the mixture again, being careful not to crush it.
Step 9
Add the vegetable stuffing in portions, mixing in several batches.
Step 10
Pour refined oil into a heavy-bottomed pot and heat it to 356°F. With damp hands, shape the minced meat into small balls and roll them in flour.
Step 11
Fry the donuts in the deep fryer, no more than 6 at a time.
Step 12
Place the donuts on a paper towel to drain off any excess oil.
Step 13
Serve with tzatziki sauce or sour cream.
