Ingredients
- Courgette - 3 pieces
- Shallot - 2 pieces
- Garlic - 2 cloves
- Self-rising flour - 3.5 oz
- Chicken Egg - 2 pieces
- Olive Oil - 6 teaspoons
- Feta cheese - 4.4 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Sour Cream - to taste
Step by Step guide
Step 1
Preheat the oven to 284°F.
Step 2
Grate the zucchini on a coarse grater and transfer to a bowl. Season generously with salt. Let it sit for 5 minutes. Transfer to a cheesecloth and squeeze out the excess liquid. Return to the bowl and add finely chopped shallot, minced garlic, flour, and eggs. Mix well and add crumbled feta cheese.
Step 3
In a skillet, heat a small amount of olive oil. Drop 1 tablespoon of the batter at a time, leaving some space in between, and fry for 3-4 minutes on each side until cooked through. Keep warm by placing them in a preheated oven. Serve with sour cream.
