Zucchini fritters with Parmesan and mint
Ingredients
- Courgette - 14.1 oz
- Onion - 1 head
- Wheat Flour - 0.7 oz
- Baking Powder - ¼ teaspoon
- Grated Pecorino Pepato Cheese - 1.1 oz
- Cake crumbs - 2 tablespoons
- Peppermint leaves - 10 pieces
- Chicken Egg - 1 piece
- Chopped Sage Leaves - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - 6 tablespoons
Step by Step guide
Step 1
Grate the zucchini on a coarse grater and transfer to a bowl. Add finely chopped onion and mix. Then transfer everything to cheesecloth and squeeze well, returning it to the bowl.
Step 2
Add flour and baking powder.
Step 3
Then add Parmesan, breadcrumbs, and egg. Mix well. Add chopped parsley and mint. Season with salt and pepper.
Step 4
Heat a small amount of olive oil in a pan over medium heat. Fry the fritters by placing 1 tablespoon of the batter at a time, adding oil as needed, cooking on medium heat on both sides until golden brown.
